Glühwein is a European tradition dating back more than a thousand years. Spices and sometimes raisins and other fruits are added to red wine and it is “mulled” – brought to a heat and served in steaming cups. This delicious beverage was first popularised by the Romans, who brought it with them as the travelled through the Rhine and Danube. As such, Glühwein has developed a distinct identity and flavour in several European countries. It is now the most well known and famous Christmas drink in Germany, where it is often drunk with a Schuss (shot); you will taste rum or some other liquor.
In the Netherlands this drink is known as “bisschopswijn” (literally “bishops wine”), and is made from either red or white wine. It is the heated with cinnamon, star anise, and possibly sweetened with honey or sugar. The drink mustn’t boil during preparation, because this will cause the alcohol to evaporate – and no one wants that!
